Why are hotel restraunts so bad? And possible solution?

So recently I was at a doubletree where myself and about 7 other biz travelers walked right by an empty hotel restraunt and onto a shuttle bus that dropped us off by some outside of hotel spots to eat.

while waiting to leave two passengers struck up a conversation that they never eat at the hotel because its generally really bad quality.

We wound up all talking about how no one was in the hotel restraunt and why they are always bad or disappointing (a generalization I know). Why it seems like service is lacking and if they do get busy at all, they can't handle it.

So whats the solution? What if they subleased the space out to a national chain where you knew what you were going to get? Would all of you be more inclined to stay at the hotel?

What would be the pros/cons for the hotel? For us?

Generally a lot of people like to venture out when in certain places to go to some local places. Others go to the national chains because at least you know what your gonna get.

Many eat at the hotels only if they are really tired, later at night etc...Hotels where people only stay once, ie don't have to build regular visitors, can be bad because they mostly likely won't see most of them again.

so what are your thoughts?
